Raw creamy tri-colored cauliflower

For the salad
1 bag frozen tri-colored cauliflower
1/2 cup chopped mini sweet peppers
1 cup organic frozen peas
1/4 cup shredded carrots
1/2 cup chopped cucumber
1/2 avocado
1/4 cup chopped celery

Cauliflower is frozen from Trader Joe’s. Rinse cauliflower and frozen peas with warm water until soft and then strain. Set aside.
Chop all desired veggies.


For the sauce
Tahini... approx 1/4 cup
Lemon juice to taste (3tbsp)
2 tsp capers ( very optional)
1-2 dates
1 tsp Turmeric (optional)
Cayenne if you like a zip

Throw all ingredients together in the blender. Add water and blend. Start with a small amount of water and continue to add until you get your desired consistency. Spice according to desired taste

Mix all ingredients together in a bowl, add sauce and enjoy!
