Day 15 - Fresh Friday Recipe Cauliflower Rice Aloo Gobi

Cauliflower Rice Aloo Gobi

5 cups frozen cauliflower rice

2 cups frozen peas

1/2 onion chopped

4 garlic cloves

4 tbsp ginger chopped

1 can of coconut milk

4 tbsp indian curry powder

1 tsp himalayan salt

Pan fry onions, garlic and ginger until slightly brown; then add frozen cauliflower and peas. Stir until thawed; then add coconut milk and spices. Cook on low for a few minutes and then serve.

Day 1 - Get Blissed with this recipe. So fresh and so fun fun.

Italian Chickpea Goodness

Ingredients

2 cans chick peas, drained

1 tbsp olive oil , (1/4 cup water)

1 medium onion , minced

4 cloves garlic , minced

1/4 cup red bell pepper , chopped

1 medium tomato , chopped

1 carrot , diced

1 tbsp dried parsley

1 tsp dried basil

1 tsp dried oregano

1 tbsp tomato paste

2 cups vegetable stock/broth

1 tsp sea salt

1/4 tsp Cayenne pepper if you like the spice.

Optional to add kale or spinach for people who like the green stuff.

Directions

Literally, put all that junk in a pot.

If you are fancy, sauté the carrots, onions and garlic in some coconut oil. Then throw everything in a pot. If you are super fancy, you put it in an instapot. If it’s in a instapot, you need 20 minutes tops on the soup setting. If it’s in a regular pot, honestly I have no idea. Possibly 30 minutes? You just want the veggies to be tender.
