Pea Tacos

2 cups Organic frozen peas
1tsp cumin (Use hot cumin if you like spice)
1 tsp coriander
1⁄4 tsp paprika
1⁄4 tsp pink salt (or more to taste)
Ground black pepper
1 Clove fresh garlic
1⁄4 fresh avocado
1⁄4 cup chopped red onion
6 Romaine hearts (serve peas in these)
Optional: add Serrano or Jalapeño for extra heat!

Measure out 2 cups organic frozen peas and rinse under warm water until they thaw. I use a bowl, let it sit then strain it through a strainer a couple of times. Add the peas into a food processor or blender (I like a manual processor, you can also just mash the peas with a fork) If using a blender blend very lightly, you don't want mushy peas! Add all ingredients in and process until it's thoroughly mixed. Scoop into lettuce wraps and serve!
You can top it with chopped tomatoes, onion, fresh pico or salsa!
